Pineapple Jam Tart

CNY is just around the corner and usually I do not bother baking cookies since me and DH are not big fans of cookies or biscuits. However, me and some friends will be having a get together after CNY and we thought it would be nice if each of us bring something homemade. My contribution will be ondeh ondeh, pineapple jam tart, coconut lemon cookies and perhaps coconut candy. Anyway, because I haven’t made pineapple jam tarts for close to 4 years, I tried baking some and loved it. Gave some to the neighbours and they loved it too. So I guess the recipe passed the test *LOL*
Recipe I used. Note the pastry is very crumbly but melts in the mouth. I can’t remember exactly whose recipes I followed because I modified the recipe a bit, otherwise I’d just put the URL here.
PINEAPPLE JAM TART
Dough for tart
ΒΌ tsp salt
125 gm butter
30 gm icing sugar
220gm all purpose flour(remove 2 tbsp and replace with cornflour)
1 egg yolk
1/2 tsp vanilla essence
Method:
Cream butter with icing sugar until light.
Add in egg yolk and vanilla and mix until combine.
Add in flour and salt
Knead to form dough.
Roll the dough out and use the cookie cutter
After filling with pineapple jam, make a crisscross with dough then glaze with egg yolk
Bake in 180c for 10-15 minutes.
Pineapple Jam Filling
250g grated pineapple
150g sugar
1 tbsp lemon juice
2 sticks of cinnamon bark
6 cloves
1 segment of star anise
